My inspiration for this recipe came from “Mr. Fusion,” one of my favorite Zumba Fitness songs. I first heard it at the 2011 Zumba Instructor Convention during my Sino Fusion workshop — which was the highlight of my weekend. Every time I hear it I’m instantly transported back to Orlando and reminded of the days spent dancing with all of my friends (and ZES Peter Wang!) in the front row. This dish is a combination of hearty African root vegetables and curry, lighter cabbage and peppers with an Asian flair, and a Latin twist thrown in with a tortilla. Full of vegetables and protein, it’s satisfying and yet light, a perfect meal before a class or as an on-the-go snack. –Michal Mymo
Afro-Asian Curry Pizza with Pan-Fried Tofu (serves 1-2)
Curry Sauce Ingredients
1/2 pack silken tofu
1 1/2 tablespoons curry powder
2 tablespoons vegetable oil
1 tablespoon sugar
1/4 cup green onion, chopped
Dash of cinnamon
Topping Ingredients
2 cups of tofu, cubed (another protein may be substituted)
1 tablespoon vegetable oil
1 1/2 cups sweet potato, cubed
3 cups green cabbage, shredded
Salt and pepper
ALSO NEEDED
Whole-wheat tortillas
Red and yellow bell peppers for garnish
DIRECTIONS
FOR SAUCE
1 Place silken tofu, curry powder, oil, sugar, green onion and cinnamon, in a blender or food processor and blend until smooth. Transfer to a smaller dish and refrigerate.
FOR PIZZA
1 In a skillet, pan fry tofu (or other protein) over medium-high heat until golden brown on one side, then flip. Once tofu is golden brown, remove from heat and set aside.
2 In the same skillet, add 1 tablespoon oil and sweet potatoes, cover and let them begin to brown, flipping occasionally. Once the cubes are beginning to turn golden, add green cabbage and sprinkle with salt and pepper. Cover and let steam for approximately eight minutes until soft. Remove from heat.
3 Lightly brush one side of a whole-wheat tortilla with vegetable oil and brown in a fresh pan. Once golden, flip the tortilla and begin to assemble the pizza. First put on a generous amount of curry sauce, next your sautéed cabbage and sweet potatoes, tofu (or other protein), and the red and yellow bell peppers. Once tortilla is crispy, remove from heat.
Cut and enjoy!
